1, 15 ounce can garbanzo beans drained and rinsed
1/3 cup finely shredded carrot – about 1 medium carrot
2 tablespoons finely chopped red pepper
2 tablespoons finely chopped white onion
2 tablespoons extra virgin olive oil
1 tablespoon white wine vinegar
1 tablespoon lemon juice
2 teaspoons dried parsley
1/4 teaspoon salt
1/4 teaspoon red pepper flakes
1/8 teaspoon black pepper
Instructions
Drain and rinse garbanzo beans
Shred carrot
Mix all ingredients together in a medium mixing bowl and serve immediately or store in the refrigerator for up to 3 days
