Ingredients
Dressing Ingredients:
3 tablespoons soy sauce
3 tablespoons rice wine vinegar
1 teaspoon grated fresh ginger
1 teaspoon grated fresh garlic
1 teaspoon honey
1 teaspoon sesame oil
1/4 teaspoon red pepper flakes
Salad Ingredients:
1, 14 ounce bag cabbage mix
2 cups chopped roasted chicken or rotisserie chicken
1 cup shelled edamame
1/2 cup shredded carrots
1/2 cup chopped red or yellow bell pepper
3 scallions (green onions), sliced thin
1/2 cup roasted cashews
1/4 cup fresh cilantro leaves
1 tablespoon sesame seeds
Instructions
Add all of the dressing ingredients to a bowl and whisk to combine. Set aside.
In a large bowl, add the cabbage, chicken, edamame, carrots, bell pepper, scallions, cashews, and cilantro. Sprinkle with sesame seeds.
Drizzle dressing over salad right before serving.
