Ingredients
1/3 cup canola oil
1 large egg
1/4 cup 2% milk
1 teaspoon vanilla extract
1/3 cup granulated sugar
1 cup all purpose flour
1/2 cup rolled oats
1 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon table salt
1 cup fresh or frozen blueberries
Instructions
Preheat oven to 400°F and spray a 8×8 baking dish with non-stick spray.
In a large mixing bowl, add canola oil, egg, milk, vanilla, and sugar – mix to combine.
On top of wet ingredients, add flour, oats, cinnamon, baking powder, and salt and mix until it just comes together.
Carefully fold in blueberries
Pour batter into baking dish and bake for 25 minutes or until a toothpick inserted into the center comes out clean.
Let cool before cutting into squares.
