Easy Hot Honey Salmon Bowls

Ingredients

2 salmon filets, around 4-6 ounces each

2 Tablespoons butter (salted or unsalted), divided

2 tablespoons hot honey, divided

1/4 teaspoon each salt, paprika, garlic powder, onion powder

1, 8-9 ounce package of microwavable plain jasmine rice (2 servings)

1 ripe, Haas avocado

1 cup thinly sliced cucumbers

1 cup edamame

Optional: Lime wedges, Calabrian chilis, cilantro

Instructions

If using oven, preheat oven to 400°F and line a baking sheet with foil.

If using air fryer, line the pan or basket with foil.

Remove the skin from the salmon and cut into 1/2″ bite sized pieces.

In a small bowl, add 1 Tablespoon of butter and 1 Tablespoon of hot honey and microwave until the butter is melted and the honey is thin. In the same bowl, add the salt and spices. Add the salmon to the bowl and toss to coat in the butter mixture. Arrange the salmon on the foil and bake or air fry for 6-8 minutes, or until the top edges of the salmon start to caramelize.

While the salmon is cooking, prepare the bowls. Heat the rice in the microwave, cut the cucumbers and cut the avocado.

In a clean bowl, heat the remaining butter and honey. When the salmon is finished cooking, add the salmon to the bowl and toss to coat.

Arrange each bowl with salmon, rice, cucumbers, avocado, edamame and optional garnishes.
