Ingredients

1 cup shredded cucumber with all the liquid squeezed out
2 cups Greek yogurt
1 tablespoon fresh lemon juice
1/2 teaspoon kosher salt
4 cups shredded cooked chicken or rotisserie chicken
2 cups halved cherry tomatoes
8 cups greens of your choice
4 tablespoons extra virgin olive oil
Instructions
Shred cucumber on a box grater and squeeze out all of the liquid
Mix cucumber with greek yogurt, lemon, and salt and set aside
Shred chicken and divide evenly into 4 bowls
Add 1/2 cup of tomatoes to each bowl
Add 2 cups of greens to each bowl
Divide the tzatziki into 4 even portions and add to each bowl
Make a well into each portion of tzatziki and add 1 tablespoon of olive oil to each bowl
