Ingredients
Scale
1 cup dry farro
1 english cucumber, chopped into 1/4” cubes
1/4 cup chopped fresh dill
2 tablespoons chopped fresh basil
2 scallions, sliced
1 lemon, juice and zest
1/4 teaspoon kosher salt
2 tablespoons extra virgin olive oil
4 ounces crumbled feta cheese
Instructions
Cook farro according to package directions
Mix cooked farro with cucumbers, dill, basil, scallions, lemon zest and salt
Drizzle lemon juice and olive oil over the top and lightly toss
Add crumbled feta to the top
