5 minute enchilada sauce

Don’t feel like you need to run to the grocery store to get your enchilada sauce – this easy sauce comes together in 5 minutes.

Ingredients

2 tablespoons extra virgin olive oil or canola oil

2 tablespoons whole wheat flour

2 tablespoons tomato paste

2 teaspoons chili powder

1 teaspoon paprika

1/2 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1.5 cups water

1 teaspoon white wine vinegar (optional)

Instructions

In a small saucepan over medium heat, add the oil and flour and whisk for 1 minute. 

Add tomato paste, spices, salt, pepper, and water and stir. 

Bring to a simmer and simmer on low for 4 minutes. 

Use immediately or store in a sealed container for up to 5 days. 

Notes

If you like your sauce a little spicy, you can add a pinch of cayenne pepper or hot sauce.
