Spiced Beef and Caramelized Onion Loaded Hummus

Ingredients

Hummus

1, 15 ounce can chickpeas, reserve 3 tablespoons liquid before draining

2 tablespoons tahini

1.5 tablespoons lemon juice

1 clove garlic

1/2 teaspoon salt

1/2 teaspoon cumin

3 to 4 tablespoons extra virgin olive oil

Caramelized Onions

2 tablespoons extra virgin olive oil

2 cups sliced yellow onions

Spiced Beef

1 pound extra lean ground beef

1 clove garlic minced

1 tablespoon tomato paste

1/2 teaspoon kosher salt

1/2 teaspoon cinnamon

1/2 teaspoon turmeric

1/2 teaspoon coriander

1/2 teaspoon cumin

1/2 teaspoon paprika

1/4 teaspoon black pepper

Garnishes

1/4 cup crumbled feta cheese

2 tablespoons pine nuts

2 tablespoons fresh chopped cilantro

Instructions

Hummus

In a food processor or high powered blender, add chickpeas, tahini, lemon juice, garlic, salt, cumin, and reserved chickpea liquid.

Blend until ingredients start to come together and start to drizzle in olive oil, 1 tablespoon at a time until your hummus reaches a creamy consistency. Use less olive oil if you want a thicker hummus and more olive oil if you want it thinner.

Caramelized Onions

In a small skillet over low heat, add olive oil and all onions. Let onions saute for 20 minutes, stirring occasionally. When they turn a deep brown, they are ready.

Spiced Beef

In a medium skillet, over medium high heat, add ground beef and cook until fully browned and then reduce the heat to low and add garlic, tomato paste, and all remaining spices, and salt. Stir until the spices are mixed in.

Putting It All Together

Spread the hummus out on a plate in a 1/2 inch layer.

Evenly spread the meat over the hummus, then the caramelized onions.

Garnish with feta, pine nuts, and cilantro

Notes

You can give a final drizzle of olive oil at the end if you have some available.

Serve with Pita Chips or large sliced carrots
