Roasted Zucchini in Olive Oil

2 medium zucchini, cut into bite sized pieces

1/4 cup extra virgin olive oil

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

1/8 teaspoon red pepper flakes


Preheat oven to 425°F

In a 9×13 pan or similar, add all ingredients and toss to coat

Roast for 10-15 minutes – depending on how firm you like your zucchini

Remove from oven, sprinkle with more red pepper flakes if you like it spicy

Serve warm
