Ingredients
Crust and Crumble
2 cups almond flour
1/2 cup rolled oats (not quick cooking)
1/3 cup dark brown sugar
1/2 teaspoon table salt
1 large egg
1/4 cup melted coconut oil
1 teaspoon vanilla extract
zest of 1 lemon (about 2 teaspoons)
Filling
1/2 cup fruit jam of your choice
Instructions
Preheat oven to 350°F and line a 8×8 baking dish with parchment paper to easily remove the bars.
Combine all of the crust and crumble ingredients in a mixing bowl and mix until just combined.
Take 3/4 of the crust and crumble mix and evenly press into the bottom of the baking dish.
Spead the jam over the crust, leaving 1/2 inch on each side.
Crumble the remaining crust and crumble mixture over the top.
Bake for 30-35 minutes or until the top just starts to get golden brown.
Allow to cool completely before cutting.
Notes
Nutrition information is for 9 servings, but these can be cut into smaller squares.
