Baked Pumpkin Spice Donuts

Ingredients

  • 3/4 cup pumpkin puree
  • 1/4 cup milk (dairy or plant-based)
  • 1 large egg
  • 1/2 cup brown sugar, light or dark
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon table salt
  • 1.5 cups all purpose flour
  • 1.5 teaspoons baking powder
  • 3 tablespoons granulated sugar (for topping)
  • 1/2 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat oven to 350°F and spray a donut pan with non-stick spray.
  2. In a mixing bowl, combine the pumpkin puree, milk, egg, brown sugar, pumpkin spice and table salt. Stir until mixed thoroughly.
  3. Add the flour and baking powder and mix until you can’t see any more flour.
  4. Add donut batter to a piping bag and pipe donuts in a circle.
  5. Bake for 12-13 minutes or until a toothpick inserted into the center comes out clean.
  6. Mix the granulated sugar and cinnamon together.
  7. When the donuts are removed from the oven, let them cool for a minute and then coat them in the cinnamon and sugar mixture by dunking them and turning them over to evenly coat each side.
