4 cups frozen pineapple tidbits – if cutting yourself, cut them small enough to not destroy your food processor.
1 cup coconut milk (such as Silk)
2 cups 100% pineapple juice
Instructions
Add frozen pineapple to a food processor with the coconut milk – pulse until the chunks start to break up and then blend until smooth.
Scoop out into 4 individual glasses and pour 1/2 cup pineapple juice into each glass.
Serve immediately.
Notes
If you want to make the pineapple and coconut whip in advance, you can transfer it to a freezer safe container and freeze until ready. Ensure you leave time for it to thaw out a little so it’s easy to scoop.
