3 ingredient pineapple whip floats

Here’s your answer to a no-added sugar dessert. It’s 3 ingredients and all it takes is a strong blade…food processor or blender that is. If you’ve been to Disney World or Disneyland, you know that Dole Whip is all the rage and it is so good! It’s also a little sugary.

When we got home from Disney one year, I decided I would try and make the next best thing and here’s what we came up with – zero complaints from the fam.

It starts with frozen pineapple. It has to be frozen, not just cold – it won’t work otherwise. You can either buy it frozen or cut it yourself and freeze it – which is what I usually do.

Add that frozen pineapple to a food processor with some coconut milk – I like the kind in the dairy aisle for this, not the stuff in the can. It can take a few scrapes down to get this all smooth, but it only takes a few minutes.

Then you scoop it out, add your pineapple juice and voila! 3 ingredient, no added sugar, high in vitamin C, pineapple whip floats. It’s the most refreshing drink on the planet.

If you’re working to get more fruit in your diet, I can’t think of a better way to get the fruit in.

Ingredients

4 cups frozen pineapple tidbits – if cutting yourself, cut them small enough to not destroy your food processor.

1 cup coconut milk (such as Silk) 

2 cups 100% pineapple juice


Instructions

Add frozen pineapple to a food processor with the coconut milk – pulse until the chunks start to break up and then blend until smooth. 

Scoop out into 4 individual glasses and pour 1/2 cup pineapple juice into each glass. 

Serve immediately. 


Notes

If you want to make the pineapple and coconut whip in advance, you can transfer it to a freezer safe container and freeze until ready. Ensure you leave time for it to thaw out a little so it’s easy to scoop.
