I have a couple of kids who love anything creamy. So, if I want them to eat it, I break out the creamy. After I made these mexicreamy chicken pinwheels, I knew it was a hit. It’s ideal for lunch boxes: bite sized, fun, nutritious and they taste good.
If you have kids, it can be a concern if they are actually EATING what we pack. MANY days, I open the lunch box at the end of the day and I see food still in there. Since most of the food I pack is fresh or needs refrigeration, that uneaten food goes in the trash. Those ice packs don’t last all day. Ugh, it makes me mad.
Even though I’ve packed lunches for an obscene number of years, it can still be challenge to get them to eat everything I pack. It doesn’t help that I have 3 kids with very different tastes and it’s my fault that I try my best to cater to their tastes without turning into a crazy person.
I love these pinwheels because they use boneless, skinless chicken breast, chopped black beans (which they won’t even be able to taste), red peppers and salsa. The cream cheese is low fat, so we save a little on the unhealthy calories, but still add some fat to help keep their bellies full.
Lunchbox Ideas: Mexicreamy Chicken Pinwheels

Serves: 3-4 whole pinwheel wraps, or 15 -17 pinwheels
Ingredients
- 3-4, 6-8″ tortillas
- 1 packed cup of cooked boneless skinless chicken breast, shredded
- 1/4 cup black beans, chopped
- 1/4 cup diced red pepper
- 3 Tablespoons salsa
- 2 oz low fat cream cheese
- salt and pepper – optional
Instructions
- Mix chicken, black beans, red peppers, salsa and cream cheese in a bowl
- Spread onto tortillas
- Roll tortillas tight with chicken mixture inside
- Cut into bite sized pieces
Notes: if using rotisserie chicken, salt and pepper may not be necessary or you may choose to omit the salt and pepper altogether.3.5.3226
