Vanilla Bean 3-Ingredient Ice Cream

It’s summer and that means all the cold treats. This vanilla bean 3-ingredient ice cream is going to become a favorite — no ice cream machine required.

First off, this was not my idea, but it’s all over the place, so I figured it’s okay for me to add my perfect little spin to it. I have a small obsession with vanilla beans, so naturally, I had to add it to this ice cream instead of plain vanilla extract.

This ice cream does take a little prep time, so don’t think that you will just be able to make it and eat it right away. I like to let it sit for an entire overnight, or 8 hours, only then will you be sure that it has a good thick consistency.

Oh, I guess I should also add that this is not what some would consider a “health” food. If you take a look at the ingredient list, you know why. Why did I post this? Because it gets you in the kitchen and making your own food and that’s a good thing.

This contains 3 ingredients:

  1. Heavy Cream
  2. Sweetened Condensed Milk
  3. Vanilla Bean

I believe that some people use low-fat sweetened condensed milk, but who are we kidding, you’re about to mix it with 2 cups of heavy cream — is the low fat stuff really going to make a difference?

Here’s my take on desserts. Sweet treats are a joy of life and there is no reason to take them out of your diet completely. Be sensible about how often you enjoy them and allow yourself a scoop of ice cream.

This vanilla bean 3-ingredient ice cream is thick, sweet, and delicious, and let’s be honest here — ice cream is meant to have these three qualities.

You could add other mix-ins or serve on top of warmed, baked fruit, like peaches, plums, or apples.

Let’s not forget that these are minimal ingredients with no additives, so be happy that you are able to make something from scratch and feel good about it.

If you’re worried about eating too much at once, you can freeze this into individual portion sizes — use small sealable containers that are either meant for the freezer, or pack them into freezer bags. Then you can just grab one when you feel like you need a cold sweet treat.

Vanilla Bean 3-Ingredient Ice Cream

Ingredients

2 cups heavy whipping cream

1, 14 ounce container sweetened condensed milk

1 vanilla bean

Instructions

Pour heavy cream into a chilled metal or glass bowl and beat with a hand mixer or in a stand mixer, until stiff peaks form (this means that you can pull the mixer away from the cream and it stands up on its own, like mountain peaks).

While the heavy cream is whipping, slice open a vanilla bean (longways) and then open it up. Use the back of a knife or a spoon to scrape the seeds from the inside of the pod.

Add the sweetened condensed milk and the vanilla bean seeds to the cream and beat again until thick and creamy.

Transfer to a metal loaf pan or to a sealed container. If using a loaf pan, cover tightly with plastic wrap.

 

Notes

You can transfer to individual containers.
