Marinated olives with feta and orange

Would you believe me if I told you this is the kind of food my kids eat for snacks? Lately, they are binging on marinated feta. A few weeks ago, we found packages of marinated feta in the grocery store and it was love at first bite. We’ve tried feta with olives and garlic, feta with sun-dried tomatoes, and olives with chilis. The feta with olives is hands down our favorite…even with whole cloves of pickled garlic.

Let me tell you though, those little packages of feta add up and were getting a little expensive, so I decided that I needed to start making some of my own and the love for marinated olives and feta did not decrease one bit.

This is a great idea for a multitude of different ideas:

  • Meat and cheese board
  • Tapas bar
  • Side dish for a plant based meal
  • Snack for adults and kids

If you’ve never tried feta before (I know there are some of you out there, because I was one of you up until about 10 years ago), it’s a beautifully creamy sheep’s milk cheese that is a Mediterranean staple around Greece. Feta is packed with calcium and protein and it also has riboflavin, vitamin A, folate, and vitamin B-12. Personally, I am always looking for more ways to get calcium, since I don’t drink a lot of milk.

Not sold on the marriage of orange and cheese? Trust me, it works. I also added some parsley, red pepper flakes, and black pepper. Make this up to 3 days ahead, because it only gets better with time.

Marinated olives with feta and orange

Ingredients

5-6 orange peel slices

1/2 cup green olives

1/2 cup black olives

1/2 cup chopped feta cheese

1/4 cup extra virgin olive oil

1/4 teaspoon dried parsley

1/8 teaspoon red pepper flakes

1/16 teaspoon black pepper


Instructions

With a vegetable peeler, peel off 5-6 slices of orange peel – careful to only get the orange part and no white
In a small mixing bowl, add all ingredients and gently stir to keep the feta intact
Allow to sit in the refrigerator for 2 hours up to 3 days
