This is the bar I’ve been trying to make for months. I know, I know, yet another recipe on how to use your ripe bananas – please tell me to stop. Just kidding, can we ever have enough? This recipe was basically a mistake. I was trying to modify my banana bread recipe, but when I started doubling everything, I didn’t want too much sugar, so I just modified a few ingredients and let me tell you, my family cannot get enough of these.
I needed a quicker cooking, more portable banana bar and these are my answer. I really do love classic banana bread, but it takes so long to bake and time is not on my side lately. We are also not the banana loving family I want us to be right now…or it’s entirely possible that I pick up bananas every time I’m at the grocery store, whether we need them or not.
I love the addition of mini chocolate chips to this, but you don’t need to add them (although I’m not really sure why you wouldn’t) – so, if you’re not the chocolate type (again, ???) add nuts, dried fruit, or leave everything out, if you’re going for that minimalist thing.
In all seriousness, do not worry about the sugar in this. If you are truly trying to take control of your health, a huge component of that is to get back to cooking at home. The sugar in this recipe is not anything to stress about – make it at home and minimize the food eaten out and do your absolute best to minimize the ultra-processed food in your diet and the diet of your family.
The junk in your diet (fast food, chips, candy, sugar drinks…) – those are contributing to health decline. It’s the everyday sugary coffees, donuts, candy bars, sodas and energy drinks that are sending you into sugar overload.
Take back your health by spending a little time to prepare food at home…oh, and make these bars – you’re going to LOVE them!
