Chickpeas and Kale

You know I’m all about balancing out your meals, and this Chickpeas and Kale side dish is so good! If you’re the cook in the house, you know that planning the main meal is the easy, but the side dishes are the hard part.

Sure, you could open a bag of frozen green beans and throw them in a skillet with some salt (guilty!), but sometimes you just want something a little more creative. Chickpeas and Kale is creative without the extra time.

I saw a version of this dish years ago come up, and I’ve been thinking about it ever since. I finally put together a recipe that worked every time I made it.

Chickpeas and Kale Simplicity

The simplicity of this side is that all of the ingredients are common in a regular grocery store. The only ingredient that is a little fancy is the pine nuts. I buy them in bulk and keep them in the fridge, but they are admittedly a little expensive, so leave them out if you aren’t a fan.

I typically always have the other ingredients on hand – canned chickpeas, breadcrumbs, jarred marinara, garlic, onions, and of course, kale!

From start to finish, this dish takes less than 20 minutes. So, while you have something roasting away in the oven, or simmering on the stovetop, whip this up and you will also have time to get a salad together.

Chickpeas and Kale

Ingredients

Scale

3 tablespoons extra virgin olive oil

1 small onion, diced – about 1/2 cup diced

1 clove garlic, minced – about 1 tablespoon minced

5 cups chopped fresh kale

1 teaspoon paprika

1/2 teaspoon kosher salt

1/4 teaspoon cumin

1/4 teaspoon red pepper flakes

1, 15 ounce can chickpeas, drained and rinsed

3/4 cup jarred marinara sauce

1/4 cup whole wheat panko breadcrumbs

1/4 cup pine nuts

Instructions

In a medium skillet, over medium heat, add olive oil and onions and saute until just translucent.

Add garlic and kale and stir until kale wilts down to half the original size. 

Add all of the remaining ingredients in the order listed, stir, turn heat to low, cover, and allow to heat through for 5 minutes.
