Oatmeal Scotchies Reborn

When I was little, my mom used to make these oatmeal cookies with butterscotch chips in them — they were called oatmeal scotchies. I loved them and was thinking about how much I love butterscotch, so I’m over the moon about my new Oatmeal Scotchie Bars.

These came out of pure accident. I was making my banana bars one day, and when I finished mixing the batter, I went to the cabinet to get the chocolate chips and they were gone. Missing food in the house doesn’t surprise me much, but I was bummed.

I had this bag of butterscotch chips in the pantry that had been sitting there for a while, so I decided I would try that. I don’t put a lot of sugar in the base of the bars, so I depend on a little chocolate to round out the sweetness.

They were a huge hit. They were such a huge hit, that they didn’t even last the morning. Naturally, I decided I needed to share this with the world, so I revamped the recipe a little and it was done.

I was able to pull a few to pack up for afternoon baseball games, because these are the perfect on-the-go snack for sports.

Oatmeal Scotchie Bar Nutrition

This is not a health food bar, but I do take some liberties in making them ever so slightly healthier.

The base is mashed bananas, whole wheat flour, and rolled oats. They also have some AP flour, brown sugar and oil.

Just like most of my other baking recipes, there are no special ingredients here, except maybe the butterscotch chips, so you could make these anytime.

Oatmeal Scotchie Bars

Ingredients

2 medium ripe mashed bananas

1/3 cup packed brown sugar

2 teaspoons vanilla extract

1/2 teaspoon table salt

1/4 cup canola oil

1/4 cup 2% milk, or whatever milk you have

1 egg

1/2 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup rolled oats

1 teaspoon baking powder

1/2 cup finely chopped walnuts

1/2 cup butterscotch chips

Instructions

Preheat oven to 375°F and spray a 8×8 baking dish with non-stick spray

In a mixing bowl, add bananas, sugar, vanilla, salt, canola oil, milk, and the egg. Whisk until the wet ingredients are fully combined.

On top of the wet ingredients, layer the flours, oats, and the baking powder – give it a little stir on top and then mix it with the wet ingredients. Fold in the walnuts and butterscotch chips.

Pour into baking dish and bake for 23-27 minutes or until a toothpick inserted into the center comes out clean.

Allow to cool before cutting.
