Almond Cinnamon Granola

Granola is one those foods that, when I make it, I wonder why I don’t constantly make it. It is easy, makes the house smell wonderful, and is such a staple food in our house. Almond cinnamon granola is about to knock your socks off.

If you rely on the bagged or boxed granola at the store, it’s fine. I like it too. Sometimes, like today, I really wanted granola, but I did not want to leave my house and I do get tired of spending so much on granola, when it is so cheap to make.

Granola uses pretty much what you already have in your house:

  • Oats
  • Oil
  • Sweetener (honey, maple syrup)
  • Spices
  • Vanilla
  • Nut butters
  • Nuts, dried fruit, crisp rice

The last one I didn’t add today, but I always add nuts, seeds, dried fruit, and crisp rice after it bakes and cools. Otherwise, the nuts might burn and the dried fruit gets REALLY dried and not fun to chew (trust me on these observations — I’ve done a lot of granola testing).

This granola is awesome because I mixed in almond butter instead of putting actual almonds in, but that would be awesome too. Granola is the best blank slate, you could use this same recipe and make a different kind every day.

Different Ways to Eat Granola

Granola isn’t just for backpacking trips for quick energy – it’s also gives you lasting feelings of fullness because of the fiber!

Here are some ways you can use your granola:

  • Plain as a snack
  • Bake in muffins, like these Breakfast Granola Muffins
  • In a yogurt parfait
  • As a yogurt topper
  • Use it like cereal with milk

Almond Cinnamon Granola

Almond Cinnamon Granola

  • Total Time: 55 minutes
  • Yield: 10 servings 1x

Ingredients

Scale

4 cups old fashioned, rolled oats

1/4 cup creamy almond butter

1/4 cup maple syrup

2 tablespoons honey

2 tablespoons canola oil

2 teaspoons vanilla extract

1 teaspoon cinnamon

1/4 teaspoon table salt

Instructions

Preheat oven to 300°F.

Mix all ingredients together well in a bowl and spread evenly on a baking sheet.

Bake for 15 minutes, then stir

Bake another 15 minutes, then stir again

Return granola to oven and turn OFF oven – let sit in a warm oven for 15 minutes

Remove from the oven and allow the granola to cool on the baking sheet – it will crisp up as it cools.
