Lemon Olive Oil Bars
It’s official, I love olive oil in my snack bars. These lemon olive oil bars are so good! They are made with fresh lemon juice, extra virgin olive oil, and some whole wheat flour for extra fiber. Every little bit helps to get to that fiber goal everyday.
Baking is my therapy, I love to bake when I feel anxious or restless. I know that pretty much whatever I make will get completely destroyed (in the best way) by my family, so I don’t have any hesitation. I do worry that I won’t get as many as I want, because I don’t make overly large batches.
Technically, this recipe makes 9 big bars, but I cut them into little triangles and you can see in the picture, which cuts the nutrition facts below in half. Maybe have one triangle now and one later, or two now — go crazy.
One-Bowl
I should mention that this is a one bowl recipe. I make all of my snack bars like this. A proper chef could scowl at me, most likely, but I hate dishes and I hate even more trying to get my family to do dishes.
I add all of the wet ingredients (plus the sugar) first and I stir that up good. Then I add the dry ingredients to the top and give that a gentle stir and then mix it all together. It comes out perfect everytime..and no extra dishes for the dry ingredients.

Ingredients
1/4 cup extra virgin olive oil
1/4 cup 2% milk (plant based milk also works)
1 large egg
Juice and Zest of 1 lemon
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup white whole wheat flour
1 teaspoon baking powder
1/2 teaspoon table salt
Instructions
Preheat oven to 350*F and spray a 8×8 pan with nonstick cooking spray.
In a medium bowl, add olive oil, milk, egg, lemon juice and zest, sugar, and vanilla – mix together.
On top of the wet ingredients add the dry ingredients in the order listed – give them a gentle stir together and then mix with the wet ingredients below just until combined.
Pour into the sprayed baking dish and bake in the preheated oven for 20-25 minutes or until the top is slightly light brown and a toothpick inserted into the center comes out clean.
Let cool slightly before cutting. Optional: When cooled, dust with powdered sugar.
