
Chocolate, Peanut Butter and Oat Energy Bars, aka my husband’s favorite snack. Here’s the truth about why I make these. I love a couple of different brands, like BeBold bars (I’m not sure these are still made) and Kate’s Real Food bars, but at $2-3/bar, that adds up, and I can make them much cheaper. My bars are pretty dang close to BeBold bars and yes, my husband loves them.
These make a lot of bars—10 big bars or you could make 14-16 smaller bars. These are ENERGY bars, they have calories, they are meant to. We have a really active house and these are the boost we sometimes need to bridge the gap between meals.
What’s In These Bars?
The ingredients are pretty simple:
- Oats: This is where most of the fiber comes from in these bars. Each one has almost 5 grams of fiber – that’s pretty good!
- Peanut butter: This is where most of the protein comes from – almost 10 grams of protein in each bar.
- Rice cereal: I added this in because it gives great texture.
- Honey: The main sweetener in this – use whatever kind you have.
- Flaxseed meal: I use this as a binder, but it adds more fiber and omega-3s! Bonus.
- Chocolate: Because it’s delicious.

Chocolate, Peanut Butter & Oat Energy Bars
- Total Time: 10 minutes
- Yield: 10–14 bars 1x
Ingredients
1 cup smooth peanut butter
2 cups old-fashioned oats
1 cup rice cereal
1/3 cup honey
1/4 cup flaxseed meal
1/4 teaspoon table salt
2 teaspoons vanilla extract
1/2 cup chopped dark chocolate
Instructions
Add peanut butter to a glass bowl, or microwave safe bowl and heat for 20 seconds to soften up and stir easy with the other ingredients.
Add all ingredients together with the peanut butter and stir together until combined.
Line a 8×10 dish or similar with parchment paper.
Press the bar filling into the dish, using another piece of parchment to press it in good.
Refrigerate for at least an hour before cutting.
Store in the fridge.
