Buffalo Chicken Broccoli Slaw Salad

My inspiration comes from everywhere. I especially love to get inspiration from the grocery store, pre-made salad bar. This Buffalo Chicken Broccoli Slaw Salad idea came from one of the salads I saw on the line at our local Amazon Fresh. It’s Amazon’s grocery store. If you don’t have one near you, just know that it’s awesome!

I’m pretty sure they used a cole slaw mix in their salad, but I just love broccoli slaw. We don’t eat a ton of broccoli, even though I love it, so this is just another way to get those antioxidants in.

Leftover Chicken Dream

I said it takes 10 minutes to come together, but truth be told, it really only took me 5. We have leftover chicken pretty often, so this is just another use for it. The broccoli slaw comes in a package, near the bagged salads and if you can’t find it, just use cole slaw mix.

I’ve made this a few times and mixed together a bunch of ingredients to make a ranch dressing, but at the end of the day, using ranch is just easier and pretty much everyone has a bottle of their favorite ranch in the fridge. Mix that with some hot sauce and you’re good to go.

Blue Cheese Life

I know blue cheese is polarizing, but there isn’t a sub out for this, sorry. If you don’t like blue cheese, I guess you could leave it out, but I hope you try it. There are very mild blue cheese’s in the store, so find one that isn’t strong and see if you like it.

Let’s Talk Nutrition

Broccoli is a cruciferous vegetable and these types of veggies have compounds in them called glucosinolates that have been studied for their role in cancer development. I try and eat some cruciferous vegetables each week. That’s everything from broccoli, cauliflower, arugula, bok choy, cabbage, and Brussels sprouts. They are all so good!

The chicken adds an excellent amount of protein to this, making it a main dish salad for sure. I added extra crunch, not that it needs is, with the celery. Celery is a must with buffalo chicken, in my opinion.

I also added a bit of extra virgin olive oil to the dressing. This is another food that I try to get some of each day. Olive oil is really good for your heart because it contains antioxidant polyphenols that can help reduce inflammation. I keep a few different oils in my pantry, but olive oil is the one I use the most.

Buffalo Chicken Broccoli Slaw Salad

Ingredients

Scale

1, 12-ounce package of broccoli slaw mix with carrots

2 cups cooked and shredded chicken

1 cup diced celery

1/4 cup crumbled blue cheese

1 teaspoon dried parsley

Dressing: 

1/3 cup ranch dressing

2 tablespoons hot sauce

1 tablespoon extra virgin olive oil

Instructions

Add all salad ingredients into a mixing bowl or salad bowl.

Mix dressing ingredients together and toss with salad.

Serve immediately or let sit in the refrigerator for 2 hours for flavors to develop.
