If you love to have fresh baked food, but can’t fathom heating up the house, the no-bake is your best option. These Almond Oat Cherry Chocolate Energy Bars are not only energy boosting, but a breath of fresh baked goodness, without the heat.
We all have a lot on our plates and pulling good and wholesome food together can seem overwhelming, but not with this recipe. This is a cinch to make because it all mixes in one bowl. Those are my favorite. Not only do I despise doing dishes, but I also don’t like things to be overly complicated. I always say that if things are too hard, they are not meant to be. I definitely apply this to my cooking.
The ingredients in this are all things I usually have on hand. If you don’t have almond flour, I wouldn’t suggest swapping that out with regular flour – it won’t work the same. You could use any nut flour, although I love the taste of almond flour. You could also use any dried fruit you have on hand. I LOVE dried cherries, so those make an appearance in a lot of my energy bars
These are best when kept cold. The coconut oil helps to hold it all together and does its best work when its cold. I like to keep a batch of these in the fridge for a quick snack during the day and they also make fantastic swim meet food for my kids. Carbs, protein, and fat all in one easy bite.

Ingredients
2 cups rolled oats
1 cup almond flour
1/2 cup almond butter
1/4 cup coconut oil, melted
1/4 cup honey
1/2 teaspoon vanilla extract
1/3 cup dried cherries
1/4 cup mini chocolate chips
Instructions
Mix all ingredients together in a large mixing bowl
In a 9×9 baking dish or pan, pour out energy bar mix into the pan
Press down until firm and refrigerate for 2 hours or more
Cut into individual bars and store in fridge until ready to eat
