It’s HOT outside and that means that keeping the oven off becomes a priority to keep the house cool and to keep the AC from working overtime. On hot summer days, I like to lean into no-cook meals that are still warm and delicious. This really is the best 5-minute tostada and is sure to make everyone in the house happy this summer…or anytime of year.
Cue the Busy Summer Schedule
We are a busy family at all times of the year, but the summer takes on a whole new level of busyness. With the kids home 24/7, my managerial skills really have to show up. We are out the door early for swim practice and then there are tasks all day. Not to mention, I have to find a few hours each day to work.
For all the parents who are home this summer, you know what I mean—there are more dishes, more laundry, more of a mess, more shoes everywhere, wet towels that just stay wet crumbled on the floor, and the lights are on IN EVERY ROOM…dang kids, turn off the lights.
It’s these busy summer days that sometimes I need a shortcut lunch. You can only eat so many sandwiches. the best 5-minute tostada is really the best. It actually takes me back to my Taco Bell days…I loved a warm TB tostada.

If you’re wondering how this only takes 5 minutes, get ready for the shortcuts in the recipe. I take a shortcut when I can, especially when I know that nutrition is not going to take a hit.
- Pre-shredded lettuce
- Canned beans
- Pre-shredded cheese

Ingredients
8 tostada shells
1, 14 ounce can of refried beans (I like vegetarian beans made without lard)
1/2 cup shredded cheddar cheese
2 cups shredded iceberg lettuce
1/4 cup diced white onion
2 tablespoons taco sauce
Instructions
Open refried beans, add to a microwave-safe dish, and heat for 2 minutes, stopping each 30 seconds to stir.
Spread refried beans on each tostada shell.
Top with cheese, lettuce, onions, and drizzle taco sauce on the top of each tostada.
