
Something happens when you get your EatingWell editing contract terminated for being a military spouse and moving overseas: you make donuts, baked pumpkin spice donuts, to be more specific.
Yep, I am officially unemployed and feeling pretty crappy about it, but as the boredom started to kick in today, I remembered that I have a blog that has been gathering cobwebs for the last 4 years and it was about time to get back in the game. I miss blogging, which takes a lot of time to keep up with, and my schedule over the last 4 years while we lived in DC has been pretty crazy. We had sports practice or games every single night of the week. I miss it a little, but I still have one in high school, so I’m holding on to it all right now.
Apparently, the extra pumpkin pie spice that I picked up last season and never opened was like manna from heaven today. The commissary here in Japan does not have it in yet and boy, did I need a little pumpkin spice today.

These beauties are a breeze to make. Here’s your tips from me to you:
- Brown sugar: it doesn’t matter if it’s light or dark, you choose.
- Use a pastry bag or a zip top plastic bag to pipe these into your donut pan and spray that baby well so you don’t have to fight with your donuts when they’re done.
- Coat them in cinnamon sugar while they are still slightly hot; it will stick better.
These bake up quickly, and save that extra pumpkin puree for another batch later in the week.

Ingredients
- 3/4 cup pumpkin puree
- 1/4 cup milk (dairy or plant-based)
- 1 large egg
- 1/2 cup brown sugar, light or dark
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon table salt
- 1.5 cups all purpose flour
- 1.5 teaspoons baking powder
- 3 tablespoons granulated sugar (for topping)
- 1/2 teaspoon ground cinnamon (for topping)
Instructions
- Preheat oven to 350°F and spray a donut pan with non-stick spray.
- In a mixing bowl, combine the pumpkin puree, milk, egg, brown sugar, pumpkin spice and table salt. Stir until mixed thoroughly.
- Add the flour and baking powder and mix until you can’t see any more flour.
- Add donut batter to a piping bag and pipe donuts in a circle.
- Bake for 12-13 minutes or until a toothpick inserted into the center comes out clean.
- Mix the granulated sugar and cinnamon together.
- When the donuts are removed from the oven, let them cool for a minute and then coat them in the cinnamon and sugar mixture by dunking them and turning them over to evenly coat each side.
