Good for you peanut butter banana brownies

Can a brownie be healthy? Absolutely. I spent a lot of time writing this recipe and it will now be my go to recipe because:

It’s delicious

It’s low in sugar

The texture is perfect

There are some ingredients that are perfect low calorie and low fat substitutions for high fat ingredients. Banana is one of those substitutions. In some baked goods, banana can be used in the place of butter or oil. This substitution works with brownies.

It’s actually pretty impressive how well these ingredients work together. I added the peanut butter to the top and swirled it in, but there are options here:

-Add to the batter for all over peanut butter flavor and a more fudgy brownie

-Use a different nut butter

-Forget it all together and add chopped nuts instead

-If you are already a seasoned baker, you could make a small amount of low fat cheesecake batter and swirl it in

I have a sweet tooth and these were my answer today for homemade chocolate goodness. Thank you bananas, what would I do without you?

Good for you peanut butter banana brownies

Sometimes you just need a brownie, but don’t need all the extra calories. Get a boost of sweetness with these brownies that have some extra nutrition baked in.

  • Total Time: 40 minutes
  • Yield: 12 brownies 1x

Ingredients

Scale

3 medium bananas, mashed

1/4 cup light or dark brown sugar

2 teaspoons pure vanilla extract

1 large egg

3/4 cup all–purpose flour

3/4 cup unsweetened cocoa powder

2 teaspoons baking powder

1/2 cup reduced fat milk

2 Tablespoons creamy peanut butter

non-stick cooking spray

Instructions

Preheat oven to 350°F

In a medium mixing bowl, mash banana and add brown sugar, vanilla and egg

Stir to combine

Add flour, cocoa powder, baking powder and stir until just combined

Stir in milk

Measure out peanut butter into a microwave safe bowl and microwave for 15 seconds to soften peanut butter until it is easy to pour

In a 9×9 baking dish, spray with non stick spray and pour brownie batter into pan

Pour peanut butter on top and take a knife over the top and swirl the peanut butter into the brownie batter

Bake for 25 minutes or until knife or toothpick inserted into the center comes out clean

Allow to cool for 10 minutes before cutting
