Walnut Butter Toasts with Raspberries, Feta, and Honey

Why are walnuts so hot right now? Omega-3 fatty acids. There are very few plant based sources of omega-3s and it can be really hard to get enough in every day, in fact walnuts are the only nut to provide an excellent source of the plant-based omega-3, ALA (2.5g/oz).

I know I struggle with getting them in and I’m starting to think about it even more with my kids. I have been buying walnuts for years, for this reason. I use them a lot, more than I thought I would.

They are my favorite nut to use in pesto, and I LOVE them roasted with chili powder, cumin, and paprika!

Regardless of your flavor preference, a handful of California walnuts is a versatile snack and can satisfy any taste preference, from savory to sweet.​

Walnut Butter Toasts with Raspberries, Feta, and Honey

Making your own nut butter is easy and convenient. Pairing walnut butter with raspberries, walnut, and feta is the snack you’ve been waiting for.

  • Total Time: 10 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

For the walnut butter

2 cups of California walnuts

For the toasts

8 small slices of whole wheat bread

1/2 cup California walnut butter

25 red raspberries

1/4 cup crumbled feta cheese

2 tablespoons honey

2 mint leaves, chopped (optional)

Instructions

To Make the Walnut Butter

Add the walnuts to a food processor and blend until smooth and the oils are released. You might have to stop 2-3 times to scrape down the sides, but it only takes about 3-4 minutes total until you have your own walnut butter.

To Assemble the Toasts

Spread 1 tablespoon of walnut butter on each toast and top with 3-4 raspberries. Sprinkle the feta cheese on top and drizzle with honey. Garnish with mint leaves (optional).

Notes

You can “toast” the bread if you like, or use a fresh, soft loaf of whole wheat.
