That’s right, I said buffalo chicken meatballs. I love anything with “buffalo chicken” in the name, so naturally, I was drawn to throw it all in meatball form. If you are gearing up for game day and making a menu, this needs to make the short list.
Game Day Food
Wings are messy, but these have all of the necessary ingredients packed into one convenient bite. These are so flavorful and the veggies bake inside the meatball, but still have a little bit of crunch, exactly what you need.
I purposely let these sit out for about 30 minutes to see what they would be like at room temp, and they are so delicious, either out of the oven or a short time after. That means if you are making these for a crowd, they will be good either way (not that they’ll last long).
Buffalo Chicken Meatball Nutrition
So what’s the nutrition like in something like this? I think it will surprise you. I add a full 3/4 cup of diced veggies into this recipe. It’s not hiding them, as you can see, they are visible. This isn’t one of those deceptive “hide the veggies” recipes.
The point was to get all the flavors of buffalo chicken into one bite — carrots, celery, onions, garlic, buffalo sauce and blue cheese — yep, it’s all in there.

Buffalo chicken meatballs will be the easiest game-day food, but might also be the tastiest!

Ingredients
1 pound ground chicken breast
1/4 cup finely diced carrots
1/4 cup finely diced celery
1/4 cup finely diced white onion
1/4 cup seasoned breadcrumbs
1/4 cup blue cheese crumbles
1/4 cup hot sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon kosher salt
1/2 teaspoon garlic powder
Instructions
Preheat oven to 375°F and line a baking sheet with foil or parchment paper for easy clean up.
Mix all of the ingredients together and form into 1-inch balls – you should get 24 total.
Place onto the baking sheet and bake for 15-17 minutes, or until a meat thermometer reads 165°F.
Drizzle with extra hot sauce is desired.
